Pizza Sauce

2 Tbl. extra virgin olive oil
1/2 c. finely chopped red onion
2 tsp. minced garlic
1 tsp. dried oregano
1 can (28 oz.) diced tomatoes
1/2 tsp. sugar
1/2 tsp. kosher salt
1/4 tsp. pepper

Combine above ingredients and bring to a boil.  Stirring.  Reduce heat and simmer 1 hr., stirring occasionally.  Can throw in blender to puree or serve chunky.     - Tricia Munk
